Many of the terpenes also have a relatively low molecular weight and also have very weak intermolecular forces, and therefore evaporate easily at room temperature. While this volatility provides an advantage for many plant species in distributing scent information, it also creates the risk of significant losses of therpenes during harvest, drying, curing, heating, and distillation processes.
